VALENCIA PAELLA
This recipe was introduced at a trade show in Barcelona.  The dish brought our Spanish vendors back daily for another taste! Chicken, clams, prawns, halibut and more will ensure your enjoyment of this Wood Stone treat!

CEDAR PLANKED SALMON
Excitement comes in many forms. We can’t imagine a more sensory stimulating item to prepare; the cedar shake is rinsed and soaked, the raw salmon filet prepared and placed on the shake and placed right in front of the flame. In a moment the shake is popping, cracking and smoke beginning to fill the chamber, things are moving fast, exciting for all, cook and diner.

SPICY SNAPPER
Whole Snapper roasted in the oven is beautifully dramatic as it emerges crispy and succulent.  If you don’t want to deal with removing the fillets after the fish is cooked, this recipe also works wonderfully well when the snapper (or other fairly oily and delicate fish) is cut into individual portions before cooking.
 

OVEN ROASTED CLAMS
This is a Spanish preparation for clams.  For most seafood and meat dishes in Spain a stone-hearth oven is the perfect cooking style.  They will cook faster with a simpler process while producing a delicious smoky flavor (even without wood).

POACHED SALMON WITH CURRIED AIOLI
This recipe comes to Wood Stone through our chef friends, Caprial and John Pence.  John and Caprial visited our test kitchen in preparation for using our oven in their cooking show.  We thought it would be great to show them how many of their recipes that they cook on the stove and in a standard oven could be adapted to a Wood Stone.  The results knocked their socks off!  (Please see the next page for aioli recipe).
